CZ V této bakalářské práci bylo cílem stanovit vybrané prvky, konkrétně chrom, měď, železo, mangan a zinek v extraktech ovoce a zeleniny. Metodou stanovení byla atomová absorpční spektrometrie s plamenovou atomizací. Před samotnou analýzou vzorků byla provedena optimalizace podmínek pro stanovení u jednotlivých prvků. Konkrétně byla stanovena optimální výška paprsku nad hranou hořáku a také bylo zjišťováno vhodné naředění vzorků. Následně byly stanoveny základní charakteristiky stanovení jednotlivých prvků za optimálních podmínek. Při analýze reálných vzorků extraktů byly používány zjištěné optimální podmínky. Připravené vzorky byly před samotným měřením vhodně naředěny. Ve všech 36 extraktech z ovoce a zeleniny byl stanoven obsah všech 4 vybraných prvků. Veškeré výsledky byly opatřeny statistickým vyhodnocením.
EN The aim of this thesis was to determine selected elements - chromium, manganese, copper, iron and zinc - in fruit and vegetable extracts. The method used for measurement was atomic absorption spectrometry with flame atomization. First, the optimal conditions for the measurement were found. Then the basic characteristics of the determination of each element under optimal conditions were determined. The determined optimal conditions were used in the analysis of real samples of extracts. The samples were appropriately diluted before measurement. The content of all 4 selected elements was determined in all 36 extracts from fruits and vegetables. All results were provided with statistical evaluation.
