Pivovarnictví na komorním panství Brandýs nad Labem v 16.-17. století

Abstract

Ondřej ZICH, Pivovarnictví na komorním panství Brandýs nad Labem v 16.-17. století, bakalářská práce, Univerzita Karlova v Praze, Filozofická fakulta, 2013, Práce představuje dva hlavní pivovary na brandýském komorním panství v letech 1547 - 1700, a sice společný měšťanský pivovar cechu nákladníků a sladovníků v Brandýse nad Labem a vrchnostenský podnik při zámku tamtéž. Zmapování městského pivovarnictví dává dopodrobna nahlédnout do statut a fungování cechu právovárečných měšťanů, včetně jejich členstva a otázky šenku piva, a to skrze památné knihy městské a památné knihy cechovní. Naproti tomu o prameny Nové manipulace opřené bádání o zámeckém pivovaru ukazuje jeho stavební proměny, zaměstnance a hospodářské výsledky. Závěrečná část práce je věnována vzájemné teritoriální i cenové konkurenci a porovnání obou podniků. Klíčová slova: Brandýské komorní panství, Brandýs nad Labem, pivovarnictví, 16. a 17. století

Ondřej ZICH, Brewery in the Chamber Domaine of Brandýs nad Labem in the 16- 17th Century, The thesis, Charles University in Prague, The Faculty of Arts, 2013, The thesis presents the two main breweries in the Chamber Domain of Brandýs nad Labem between 1547 and 1700, the communal municipal brewery of the brewers' guild in Brandýs nad Labem and the emperor's plant by the castle in the same place. The description of the municipal brewery lets us see in detail the statutes and working of the brewers' guild, including its membership and its problems with beer taverns, through the municipal and guild chronicle. On the other hand, research about the castle brewery is based on sources from Nova manipulace indicating its building adjustment, employees and profit. The final part of the thesis is dedicated to the mutual territorial and price competition and a comparison of both breweries.
