In this thesis, we study Helly numbers of discrete sets via their equivalent character- isation by holes. We consider Cartesian products of sets of real numbers, building on the work of Dillon (2021). We generalise his condition on sets with infinite Helly num- bers to distinct sets and use it to find various new examples of such sets in the plane. We provide a new proof of the infinitude of Helly numbers of the Fibonacci set using D'Ocagne's and Cassini's identities. We examine sets avoiding prime numbers, improv- ing known bounds on their Helly numbers. We also consider Helly numbers of point sets in higher dimensions and introduce PATH-Finder, a program for visualising the largest holes in two-dimensional discrete sets. Finally, we propose several open problems and conjectures.
