První poskytuje obecné teoretické a metodologické základy k tématu pivovarnictví v rámci vrchnostenských velkostatků v Čechách. Popisuje vývoj vztahu mezi šlechtou a pivovarským podnikáním a zatížení piva daněmi uvalovanými státem, které přináší několik statistických pramenů k poznání pivovarnictví 18. století. Velký prostor je věnován popsání procesů opatřování a zpracovávání pivovarských surovin v predindustriálních pivovarech a monopolu odbytu piva v rámci panství (propinační právo).
Master thesis is dealing with history of brewing in overhead of country estates southeast of Prague between 1489 - 1789. It is divided into two parts. The first one presents a general theoretical and methodological foundations on brewing within the estates in Bohemia. It describes the development of relationship between the nobility and the business of brewing and loads of beer taxes levied by the State which brings several statistical sources for knowledge of brewing in the 18th century. Large space is devoted to describing the process of procuring and processing of brewing raw materials in the pre-industrial breweries and their functioning and the monopoly on beer sales within the estate (ius propinandi). The second part is based on these previous findings and describes the history of breweries in the specific region in the neighborhood of the capital city of Bohemia. The thesis is equipped with the conceptual apparatus of the brewing terminology used in Bohemia 17th - 18th century, including contemporary German translation. It is suitable as a basic guide to explore the regional history of pre-industrial brewing in Bohemia.
