Abstract

Dining, banquets and related social rituals are important elements which go through the whole history of human society. The aim of the submitted dissertation is to show this phenomenon as an integral part of the origin, the existence and the development of civil society. In the introduction the development of the conception civil society is briefly summarized and the sense in which this conception will be dealt with in the dissertation is mentioned. Also the starting points, the aim of the dissertation and the methodics used are shortly outlined here. The second part is an anthropological view concerning the issue, where the significance of human ability to modify food using heat is especially emphasized as an essential condition of further development.of mankind. The third part of the dissertation provides us with an overview of a historical development of collective boarding and social boarding, while the gradual transformation of the society towards its current form is emphasized. The fourth part deals with a case study of a particular civil association, which is concerned with the culture of dining, protection of local products and support of traditional technologies. Stolování, hostiny a s tím spojené společenské rituály jsou významnými prvky, které procházejí celými dějinami lidské společnosti. Cílem předkládané práce je ukázat tento fenomén jako nedílnou součást vzniku, existence a vývoje občanské společnosti. V úvodu je stručně shrnut vývoj pojmu občanská společnost a zmíněn smysl, v jakém se bude v práci s tímto pojmem pracovat. Jsou zde také stručně nastíněna východiska, cíle práce a použitá metodika. Druhá část je antropologickým vstupem do problematiky, kde je zvláště vyzdvižen význam samotné schopnosti člověka tepelně upravovat stravu jako základní podmínka jeho dalšího vývoje. Třetí část práce poskytuje přehled historického vývoje společného a společenského stravování, a to s důrazem na postupnou přeměnu společnosti k její současné podobě. Čtvrtá část se věnuje případové studii konkrétního občanského sdružení, které se zabývá kulturou stolování, ochranou místních produktů a podporou tradičních technologií. Vzhledem k tomu, že toto občanské sdružení je součástí vlivného mezinárodního hnutí, poskytuje studie podnětné informace a zajímavá srovnání. Závěr shrnuje získané poznatky a zamýšlí se nad možnostmi dalšího vývoje v této oblasti.
