Kultura vietnamské gastronomie

Abstract

Bakalářská práce se zabývá kulturou vietnamské gastronomie. První část práce pojednává o jídle a pití ve Vietnamu s důrazem na sociální rozměr společného stravování a regionální rozdíly. Další část se věnuje náčiní, které se ve Vietnamu při stolování běžně používá. Předposlední část se zabývá kulturou stolování majoritního etnika Vietů. V této části jsou popsány každodenní rodinné rituály spojené s jídlem, kulturní zvyky a jejich význam. V závěrečné části práce je zkoumáno, nakolik jsou rodinné zvyky a tradice dodržovány ve vietnamské komunitě v Praze. Klíčová slova: kultura gastronomie, rituály, vietnamská gastronomie, stolování

The thesis is focused on the culture of the Vietnamese gastronomy. The first chapter introduces the food and the drinks in Vietnam with emphasis on the social context of the dining and regional differences. The next chapter covers equipment usually used in Vietnam for dining. Third chapter is focused on the culture of the gastronomy of the Viet ethnic majority. This chapter includes description of everyday family rituals linked with the dining, cultural customs and their meaning. The ending chapter researches how are the family customs and traditions followed within the Vietnamese community in Prague.
